Sustainable Table makes creative use of the many ingredients which are seasonally available in the Capital District, New York State and the Great Northeast. Eating locally and within the seasons assures year round support of local farms as well as availability of ingredients with the best nutritional value, as most produce begins to gradually lose moisture and nutrients as soon as it’s harvested.

Does this mean you’ll be enjoying potatoes and carrots every night this winter? Never! Vegetables available for the winter season include a variety of root vegetables grown and stored locally, such as beets, sweet potatoes, winter squashes, celeriac, leeks, parsnips, turnips, and yes, carrots and potatoes. Many greens grown indoors are also available, and some tomatoes for a short time. Winter fruits include many varieties of apples and pears, along with tangy, ruby-red cranberries. In combination with a myriad of other local ingredients including meats, poultry, cheeses, pastas and more, you’ll be sitting down to a delicious meal every night which will warm your soul and delight your taste buds!
